Poqui poqui – is a traditional Ilocano dish. It is a mixture of all these ingredients: Eggplant, tomatoes and onions just like an omelette. Very easy, very tasty and healthy. Most of all inexpensive! Perfect for those who loves to eat vegetables! Enjoy!
Prep Time: 10-15 minutes
Cooking Time: 25-40 minutes (including grilling/broiling eggplant)
Servings: 3-4
Ingredients:
- 3-4 medium Eggplants
- 2 eggs (beaten)
- 1 small onion(sliced)
- 3-4 cloves garlic(crushed)
- 1 medium tomato(cut in small cubes)
- 1/2 tsp pink salt
- 1/2 tsp grnd black pepper
- 2 tbsp olive oil
Directions:
- Grill the eggplants, then peel off skin. Chop the eggplants in small cubes
- Preheat the pan with oil, then sauté garlic, onion and tomatoes
- Add the eggplants and saute and season with salt and pepper
- Add the beaten egg mixture and mix all the ingredients.
- Transfer to a platter and serve with steamed rice. You can also eat with bread
Tips:
- If you don’t have any griller, Just bake them in the oven, if you have the small one. Bake for like 20-25 minutes then broil for about 5-7 minutes
- If you still don’t have either oven or griller, try boiling them and just peel the skin and chop. Just remember that It will not be as flavorful as the grilled method of cooking
